Diners at LONgTIME love its location in a Valley alleyway that makes it feel like a secret. Inside, there's a party ambience, with mood lighting bouncing off exposed brick walls and a playlist of cool tunes. Long communal tables overlook the open kitchen, which pumps out contemporary Asian dishes, care of some seriously accomplished chefs. Collectively, the kitchen team has worked under 3 Michelin-Starred Chefs, cooked for both British and Thai royal families, and individually earned and maintained hats in two of Australia’s most highly regarded Thai restaurants. After 5 years of running Yandina’s Spirt House, Ben Bertei has made the move down the Bruce Highway to head up the kitchen, bringing along his long-term colleague Nathan Lastavec who began cooking with him when they were part of the start-up team at Longrain Melbourne. Bringing a mastery of specialty dishes from the Thai royal kitchens brings welcomed added flavours to the team.
