Our culinary team headed by Angel Dominguez Fernandez from Galicia create the traditional and authentic flavours of our classic Spanish dishes utilising the best quality ingredients sourced locally whenever possible. We only use 100% guaranteed Irish fresh beef, pork, lamb and poultry and free range eggs which are Bord Bía assured and 100% Spanish cured meats which are all fully traceable. Our lovely fish and seafood are delivered daily from the most reputable suppliers. We of course source our fruit and vegetables through Irish suppliers and use seasonal produce wherever possible.
