Head Chef Ben Sitton’s menu combines intricate flavours with influences from all over Italy. Think Piedmontese tartare with anchovies and witlof or goats curd tortelli with peas. Making the most of Uccello’s stone oven, Ben has also perfected wood-fired proteins such as octopus with chickpea puree, quail with pomegranate and Bangalow pork loin with Tuscan cavolo nero.
