Banksii is the second creation from husband and wife super team Hamish Ingham and Rebecca Lines, bringing a taste of Australia, native style to the shores Barangaroo, Sydney. Inspired by the Australian landscape and named after botanist Sir Joseph Banks, the restaurant uses botanicals, wild herbs and native ingredients to shape their menu. Fresh, light and seasonal these dishes are designed to share whilst enjoying the chilled ambience. Fans of Vermouth will be impressed with the 40+ variety collection that features in many of the Banskii signature cocktails.
Opened in October 2016 by husband & wife team Hamish Ingham & Rebecca Lines in the new waterfront precinct of Barangaroo. Banksii is a Vermouth Bar & Bistro, lovingly named after Sir Joseph Banks, the first botanist to adventure & document the plants & botanicals of Australia. The contemporary menu is light & fresh influenced by the Mediterranean with a strong focus on botanicals. The drinks list is extensive with up to 30 vermouths available by the glass, classic cocktails & 150 wines on offer to suit all tastes. Banksii holds up to 200 guests across the bar area, indoor dining & our north western outdoor terrace.
