Step down the stairs into an opulent pastel world of cocktails and grandeur at Darlinghurst's Della Hyde. Brightly adorned with an enviable collection of bottles that line the lively bar as after five crowds fill the boutique space. A light menu of arancini, ceviche, and sliders is available and the menu changes regularly, crafting perfect snacks to marry with the signature cocktails.
Della Hyde is Applejack's playful interpretation of vintage hotel bars of the past, with charming interiors, good tunes, and a strong focus on seasonally fresh cocktails.
Arches and pink hues defining the space with inspiration drawing from Wes Anderson (Grand Budapest Hotel / Royal Tenenbaums, Darjeeling Ltd) and inspiration from owners Ben and Hamish’s own travels, creating a space truly unique to the Sydney night space.
The drinks feature classics as well as more innovative cocktails such as the gin-infused cold drip negroni. The Seasonal List is updated monthly using seasonal Australian produce.
Food wise, the menu has European and North African influences, substantial enough for dinner but also perfect for a couple of snacks alongside cocktails.
