Chargrilled pork belly strips atop bed of soft rice noodles epitomises her style, the dish buoyant with Vietnamese and perilla mint, sorrel, lemongrass, chilli, pickling onions, roast eschalots and peanuts, all at once light , nutty, smoky and delicious. Then there's beaut duck, roasted, de-boned, crisp-skinned and served with pan-fried gai choy and ginger and plum dipping sauce for a dash of French colonial flavour. Regardless of the odd Chinese spice, this is the contemporary cuisine of South Vietnam.
